My #adobo recipe:

1 cup low sodium soy
1/2 cup datu puti vinegar
A handful of garlic cloves minced
2 jalapeños minced
2 tablespoons of brown sugar
Beer
Oh yeah, and chicken

Sauté garlic & jalapeños till they’re all fragrant and cooked (not burned). Brown chicken scooping, add vinegar & soy sauce. Turn the chickens around every so often so they absorb the sauce evenly. Once the chicken starts too look cooked, taste the sauce. You’ll probably be like, “aww thats sour or salty”. Add some brown sugar, let simmer. Taste it again, add brown sugar to nuturalize the taste. Then add some beer. Like 1/4 of the beer your sipping on, maybe 1/3. Add pepper bay leaves and simmer on medium heat till the sauce reduces to this sticky goodness and the chicken is falling off the bone.
